It’s hard to believe that today is the first day of May, I feel like I blinked and April had past. Sometimes I wish I could slow down time, take a deep breath and really take it all in. April was a great though, from a couple work trips to the Glass Animals concert and my future Sister-in-Law’s bachelorette party, I was on the go most of the month. I’m looking forward to May being a little slower paced and enjoying the warm weather before it becomes overbearingly hot in Atlanta.
Anyway, when I posted “Currently” last month was when I realized that people are actually reading this blog. So I thought I would make it a monthly thing…I hope you enjoy!
Cooking: So technically this isn’t a meal, BUT I’ve been making a corn and bean dip for almost every social occasion lately and it’s always a huge hit! I can’t take full credit for it, a girlfriend of mine brought it over to a summer BBQ we were hosting last year and I was hooked! I asked for the recipe and have been making it regularly since and bonus points…it’s super easy:
- 1/2 Cup olive oil, 1/2 Cup Apple cider vinegar, 1/2 cup of sugar
- Bring to a boil until sugar dissolves, remove from heat and place in refrigerator to cool
- 2x cans of Shoepeg corn, 1x can of black beans, 8 oz of feta cheese, bunch of green onions, fresh cilantro
- Mix in bowl, add cooled vinegar mixture and eat with chips!
Reading: Still reading June: A Novel by Miranda Beverly-Whittemore | I am enjoying this book a lot, it’s just not the type that makes you not want to put it down. I have a couple books I’m ready to read next, so hopefully I’ll finish this any day now.
Project: Furnishing our finished carriage house
Lusting after: This Canon Advanced Point-and-Shoot camera…I love my SLR camera, but the focus on my favorite lens just stopped working, and honestly it’s just a little too much to carry around with everything else I need to have on me for a toddler.
Looking forward to: My baby brother’s wedding over Memorial Day weekend!
Watching: Heineken ad – A powerful statement, and being dubbed the “anti-pepsi ad” | I’ve also been binge watching The Fall on Netflix, it’s a little dark but really well done.
Listening to: S Town | I may be a little late to the game here, but once I started I couldn’t stop listening to this Podcast.
