I hope everyone had a great weekend! This one was one of the first in a quite a while where we didn’t have many concrete plans going into it…which made it really fun. I went to the Atlanta Food and Wine Festival, got to sleep in, we met up with friends at a neighborhood festival, checked out a new neighborhood restaurant for brunch and even had a quick trip to the zoo for Jackson.
Here’s to hoping the rest of the weekends this month can be as fun, spontaneous and refreshing as this one was.
Since I haven’t been updating you all as often as I would like, here’s my monthly roundup from May…hope you enjoy!
Cooking: I haven’t been cooking or trying new recipes as much as I would have liked this past month, instead it’s been easy dishes like blackened tilapia, sausage and potato medleys and kale salads on repeat. So instead I’ll share one of my favorite go-to recipes this sausage and spinach risotto. It’s always a hit and you can play with the ingredients to make it your own…like swapping in a different protein or using kale instead of spinach (but if you do this cook the kale first)
Reading: All the Missing Girls, by Megan Miranda…I couldn’t put this book down, I read it every minute I could and finished it in four days
Project in the works: Furnishing the carriage house and getting it listed on airbnb…we are SO close
Looking forward to: Laid back summer weekends, and they’re finally here!
Watching: 13 Reasons Why – I read this book ages ago and had heard all the hype, but I wasn’t expecting to fly through this series as quickly as I did.
Goal for June: Getting back on track with eating healthy…these past couple of weeks I have definitely been indulging
Planning: Our trip to Mexico in August! We’ll be in the Riviera Maya in mid-August, please share any suggestions for restaurants to try, things to do, or places to check out. Jackson will be with us, so toddler friendly ideas are much appreciated.
