I hope everyone had a great 4th of July! I don’t know about you, but I love these abbreviated work weeks – they’re even better when the day off is midweek – here’s to hoping these next few days fly by.
Overall our long weekend was great…we saw lots of friends, visited the zoo, introduced Jackson to watermelon (and he’s obsessed!), went on a hike, hosted an impromptu dinner party and went to a couple cookouts. I’m moving a little slow this morning after a full day yesterday, but I wouldn’t have changed a thing.
I feel like I just wrote May’s wrap up post, it’s hard to believe we’re solidly into July already, but here’s what June looked like for me:
Cooking: With summer in full swing I am rarely cooking full meals – instead Ryan is on the grill and I’m making easy sides to go with what ever the protein is he’s making. That said, my two staples this past month has been blackened tilapia and kale smoothies.
- Blackened Tilapia – I found this great Tequila Lime seasoning in the International section at the grocery store that is perfect for fish. I poke the fish with a fork, squeeze a lime over the filet and then rub the seasoning all over. I stick it in the fridge for 20 minutes to an hour and then just pan sear it until it’s cooked through. This is great over a salad, or with a veggie and starch…and it’s SUPER easy!
- My go-to smoothie lately is also really easy – Chobani coconut greek yogurt, one banana, fresh pineapple, a squirt of agave, a pinch of chia seeds, a handful of cut up kale and crushed ice. If I’ve worked out before I make this I’ll also add in a scoop of protein powder…and this will hold me over until lunch or even mid-afternoon.
Reading: The Alienist, by Caleb Carr – I’ve been struggling with this one. I really like the storyline but it’s a little tough to get into and I haven’t gotten into it yet.
Project in the works: Nothing major right now
Looking forward to: Jackson and I are taking a quick weekend trip to Virginia in a couple of weeks to meet a couple new babies. This will be my first time traveling alone with Jackson, here’s to hoping he sleeps on the flights and is really well behaved!
Watching: Bloodline on Netflix, the final season has been released. This one is a little darker than the first two but still
Listening to: Glass Animals – Jackson loves their most recent album so it’s on repeat in our house. And of course I am still on my true crime podcast kick and the most recent one I can’t stop listening to is Mared & Karen, a story about two WVU students who were found murdered in the 1970’s and the case was never solved.
Goal for July: Working out and eating healthy…I have just over a month until we head to Mexico – so this is crunch time!
